Lay out chicken on a cutting board & pat dry both sides
Cut chicken into small bite-sized pieces. Place in a bowl.
Cut pineapple into small bite-sized pieces (or use drained canned diced pineapple). Place in bowl with chicken.
Add oil to bowl with chicken and pineapple. Add spices to coat chicken and pineapple.
Heat pan over medium high heat and add high smoke point oil
Stir fry chicken and pineapple. Once chicken is cooked, add a squirt of BBQ sauce.
In a separate pan, heat over medium low heat and add a small amount of oil.
Place tortilla in pan and spin around to coat with oil. Add cheese and cover until the cheese melts.
Add chicken and pineapple mix, another squirt of BBQ sauce, and more cheese.
Fold over tortilla, and fry until golden and crispy. Flip every minute or two.
Heat the blackstone over high heat and add high smoke point oil
Add chicken and pineapple. Toss after a minute. Add a squirt of BBQ sauce and toss again.
Add a squirt of water and cover with dome for 3-5 minutes.
Remove pineapple and chicken or move it to a warm corner.
Reduce heat to low. Add a little bit of oil and place tortilla on top.
Add cheese and cover until melted. Once melted, add pineapple and chicken, another squirt of BBQ, and more cheese.
Fold over and fry until golden and crispy.
