This yummy homemade version of your favorite Chinese takeout side isn't as hard as you may think it is! By making it at home you control how much of each ingredient goes in.
Most people don't have leftover rice just sitting in their fridge, so you can make your own "Day Old" rice a few hours ahead of time.
Using your rice cooker or stovetop, cook rice as directed. Remember white rice is a 1:1 ratio of liquid to rice. Butter helps to keep it from sticking.
**I use Chicken or Beef stock - depending on the main dish - instead of using water.
When the rice is finished, fluff as usual. Then allow to cool and place in the fridge, covered, for a few hours.
Heat 0.5 tbsp butter and cooking oil in a pan over medium heat.
Scramble your eggs. Remove the pan and set aside.
Add 1 tbsp of butter and a small amount of sesame oil to the pan. Add your veggies and garlic, with a pinch of salt and pepper. Sauté for 5 minutes.
Increase the heat and melt the remaining 1.5 tbsp of butter. Immediately add your "Day Old" rice, soy sauce, and oyster sauce (if using).
Stir for 3-5 minutes. Then add the eggs back in to warm them.
Remove from heat, add another quick drizzle of sesame oil and soy sauce (if needed).
Serve and enjoy, don't forget your chopsticks!!
