Made with super juicy pork tenderloin AND honey ham, this meaty ham and cheese sandwich is a staple in Florida.... and now our house as well!
Combine your roast pork marinade ingredients.
**Fresh squeezed juices are always preferred! I can't say it enough!!
In an oven-safe dish, place your pork tenderloin in. Pour your marinade over, and let it sit, covered, for 60 minutes.
With 10 minutes left on the marinade, preheat the oven to 450ºF.
Cook your pork uncovered for 20-25 minutes or until it reaches an internal temp of 140ºF. Once cooked, allow to rest for 5 minutes.
**The excess marinade will burn, and that's okay.
Meanwhile, cut the ends of the loaf off. Then cut the loaf into four and slice to make a top and a bottom.
Melt the butter in the microwave in 10sec intervals.
Brush butter onto the outside of the tops and bottoms. Sprinkle with salt and pepper.
Flip the breads back over, and drizzle mustard on all 8 slices.
Add 1-2 slices of Swiss cheese on all 8 slices.
Add 2-3 slices of ham to the bottoms.
Add the thinly sliced pickles.
Thinly slice your roasted pork and place 3-4 pieces on your sandwich. Then put the tops on all of your sandwiches.
Heat up a panini press. Press and grill your sandwich until golden brown.
If you don't have a panini press, heat up a skillet. Place your sandwich in and listen for the sizzle! Then take another CLEAN pan and press the bottom of it down onto your sandwich for 2-3 minutes. Flip your sandwich and press down for another 2-3 minutes.
Cut on the diagonal and enjoy with some kettle cooked chips.
