This dinner literally comes together in under 10 minutes and takes 10 minutes to cook in the Instant Pot. This was my second meal in the IP and I'm sold.
Reheats well, so if there are any leftovers take them for work!
Cut chicken into 1 inch cubes
Add chicken, taco seasoning, & chicken broth to a 6-qt Instant Pot and gently toss to combine
Stir in corn, black beans, salsa, and green chilis
Rinse rice until water is clear. Add to the Instant Pot *DO NOT STIR IN*
Select Manual setting, adjust pressure to high, set timer for 10 minutes. when finished cooking quick release pressure according to manufacturers directions.
Stir in cheese until melted and serve immediately.
Add cilantro to your desired level and ENJOY!
