Need a quick and easy meal for a busy weekday? If you don't like pepper jack cheese feel free to use whatever you like best.

 1 lb Ground Beef
 1 tsp Minced Garlic
 ½ cup Chopped Onion
 12 oz Cheddar Cheese Soup
 1 cup Pepper Jack Cheese (Shredded)Divided
 Tater TotsEnough to cover top of casserole
 BaconOptional item but very yummy
 1 Tomato (diced)Optional

Preheat oven to 400°F and cook the tater tots until nearly done. The will be cooking more during the final stages. Honestly there are instructions on the bag, these are your best bet. I cook them until they look right... (probably not the "best" way to do it)

I like crispy tater tots so I cook them through completely.

While tots are cooking brown the ground beef adding the onion and garlic to the mixture and cook until 90% of the pink has been cooked out.

Drain most of the grease off this mixture mix in cheddar cheese soup and half of the cheddar cheese (bacon and tomato, if desired) and pour into a small casserole dish.

Once everything is in the dish take the previously cooked tater tots to the top of the casserole and cook for 25-30 minutes.

Two options:
1) remove the casserole from the oven and sprinkle the remaining cheese on the top allow to melt.
2) remove the casserole from the oven add the cheese then return to the oven and broil for a few minute until cheese melts.

Serve and Enjoy!
