1 tbsp Extra Virgin Olive Oil
1 Small Yellow Onion, Chopped
2 tbsp Garlic, Minced
1 lb Rotini PastaFusilli, shells, or others work also
1 Head Broccoli, MediumCut into small florets
3 ½ cups Water
2 cups Half-and-Half
2 cups Shredded Cheddar Cheese
½ cup Parmesan, Freshly Grated
Salt & PepperTo Taste
1 pinch Crushed Red Pepper Flakes

In a medium sauce pan add oil and onions and cook until translucent. Approx 5 mins.
Add Garlic and cook until fragrant. Approx 1 min.

Add Broccoli, Pasta, Water, & Half-and-Half and bring to a boil
Reduce Heat add Red Pepper Flakes, Pepper, & Salt and simmer until pasta is Al Dente. Approx 13 mins.

Mix in Cheese.
