A simple classic all the way from New Zealand. Great cold covered in ketchup. We wold take squares of this to work as lunch or a snack.

You can leave out the cheese and make it dairy free, or you can add whatever else you desire!

 2 rolls of ready made pie crust
 1 lb bacon
 12 eggs
 ½ cup chopped onion
 ½ cup grated cheese
 ½ cup baby spinach

Preheat oven to 350(F)
Line desired baking dish with baking paper.
Line bottom and sides with ready made pie crust. Save some from a lattice top if desired.

Layer all ingredients. Season with salt and pepper.
Lattice the top with remaining pastry, or leave open.
It's all up to you!

It will be cooked when the middle is a little firm. It will continue to cook as it cools so be mindful not to overcook.
