Bacon Marinara Sauce

Have a few extra uncooked slices of bacon leftover from breakfast? This is the perfect way to use them! This easy, tasty sauce can be used with multiple Italian dishes, including manicotti (pictured), stuffed shells, or over any pasta. Even better with some spicy sausage!

 ¼ lb Bacon, chopped into small pieces4-5 slices will do fine
 12 tbsp Olive OilOptional, if you're low on bacon, or your bacon is more lean
 1 Large Onion, choppedOr 2 medium onions
 4 Garlic Cloves, choppedOr 3 tbsp of jarred minced garlic
 28 oz Crushed Tomatoes
 8 oz Tomato Sauce
 6 oz Tomato Paste
 1 tsp Dried OreganoOr 1 tbsp of fresh oregano
 1 tsp Dried BasilOr 1-2 tbsp of fresh basil

In a sauce pan, drop in your chopped bacon, and start cooking on medium-high heat.

After 2-3 minutes, or when the bacon starts rendering some grease, add the chopped onions. (If you're not getting a lot of grease because you're low on bacon, or your bacon is more lean, you can add 1-2 tbsp of olive oil)

Continue stirring the bacon and onions. Watch your heat, so the bacon doesn't cook too quickly, and stays soft.

As the onions start getting semi-transparent, add in the chopped or minced garlic. Continue stirring.

When the onions are more transparent, and the garlic is cooked down slightly, lower heat to low-medium. Add in the crushed tomatoes, tomato sauce and tomato paste. Stir until all incorporated.

Add in the oregano and basil.

Let simmer for at least 10 minutes. If you can wait longer, give it a full 30 minutes.

Optionally, add your favorite meat, like spicy sausage (highly recommended), meatballs or even some chopped pepperoni.
